Serves 4 pax
500g of boneless chicken thigh
2 tablespoons of light soy sauce
1.5 tablespoons of fresh ginger juice
1/2 teaspoon of black pepper
1 tablespoon of Chinese cooking wine / Shaoxing Huatiao wine
1/2 tablespoon of sesame oil
3 tablespoons of cornflour
Prepare more cornflour for coating before deep-frying
Some cooking oil
1 thumb size ginger – julienne
5 cloves of chopped garlic
1/4 cup of water
4 tablespoons of tomato ketchup
2 tablespoons of honey
