serves 3 – 4
Marinating the pork (for at least 2 hours)
400g of spare ribs – cut into small pieces
2 tablespoons of light soya sauce
1 tablespoon of black bean paste
0.5 tablespoon of sesame oil
1 tablespoon of salted black beans – washed
4 cloves of garlic – minced
1 tablespoon of Chinese cooking wine (Shaoxing cooking wine)
1 teaspoon of sugar
1 tablespoon of young ginger juice
Add the following to the marinated pork before steaming
A few dashes of white pepper
2 tablespoons of corn flour
3 bird’s eye chilli – sliced (optional)
